White Rabbit Vanilla Sugar Cookies
Creamy vanilla, sweet condensed milk, a wisp of rice-paper
An homage to our favorite Chinese candies growing up, White Rabbit! White rabbit candies are a milky, chewy, taffy-like candy rolled up in a thin sheet of edible rice paper. As children, we loved the way the rice paper dissolved on our tongues, and we tried to replicate that sensation in these cookies, rolling them in a thin coating of powdered sugar that melts in your mouth as you bite into them. We put plenty of high-quality vanilla paste in these cookies (you can even see the flecks of vanilla bean!) to give them a comforting, creamy taste. We also adorned these cookies with a piece of real White Rabbit candy, and an extra piece of edible rice paper so that you can experience these nostalgic treats with us!
