Pineapple Tart Sandwich Cookies

slow-cooked pineapple jam, soft buttery cookies with a hint of nutmeg 

These cookies are a labor of love! The pineapple jam is made completely from scratch in the traditional way! Fresh pineapples are painstakingly skinned, sliced, and cooked over the stove with just a pinch of nutmeg for 6-8 hours until thick and caramelized! An homage to one of my favorite Singaporean treats that my grandmother used to bring us each year.
